Omega-3 and omega-6 are polyunsaturated and essential fatty acids, that is, fats that we must obtain through the diet, because the body is not able to synthesize them. These two fatty acids can influence inflammation through a variety of mechanisms. Eicosanoids produced from omega-6 fatty acids such as arachidonic acid have a pro-inflammatory role. Conversely, omega-3 fatty acids such as alpha-linolenic acid, gives rise to eicosanoids with anti-inflammatory properties.

A diet rich in omega-3 fatty acids and low in omega-6 produces more beneficial anti-inflammatory substances and less inflammation and decreases the risk of chronic diseases like cardiovascular disease, cancer, and celiac disease.
