High performance athletes have included chia and its byproducts as a fundamental part of their diet. This seed plays a fundamental role in two reasons that concern them: the oxidative process (closely related to ageing and increase in proneness to illness) and the inflammatory process. In both cases, omega-3 fatty acids and antioxidants, such as polyphenols, provide protection due to their anti- inflammatory effect which also modulates the oxidative response.
